Fried Tomatoes

An easy side dish that we found from Kokbok. It went really well with fava bean stew and carrot pilau. The original recipe was for six people, but I made a little smaller batch, which would be enough for four eaters.

Fried Tomatoes

2 big tomatoes
2 tbsp wheat flour
3 tbsp water
1 dl dry bread crumbs
oil for frying

Slice the tomatoes thickly. Mix the wheat flour and water together in a bowl. Put the bread crumbs in another bowl and season with salt. Dip each tomato slice in flour mixture and then roll in bread crumbs. Fry both sides in oil until nicely browned.

    I’ve tried fried green tomatoes before and was on the fence. These look fabulous. Might have to give them a try.

      I’ve always considered green tomatoes a bit overrated, these on the other hand were pretty nice. And also quite versatile, I can imagine a lot of meals where to incorporate a couple of these.
